I think the Coen brothers chose that song with a sense of irony because the Dude was kind of fucked up.
They chose Dylan's The Man in Me because they liked it. I'm no Dylan fan, but the song is from Dylan's best album, IMHO, New Morning.

Kenny Rogers re-recorded the song for one of his solo albums, which has a certain charm, but it's not nearly as funky/gritty/woman-toned as the First Edition version. "If a man's gonna eat fried chicken he's gotta get greasy..."
